I bought Xpanel software to start seriously working on my panel layout.  Here's what I have so far (pretty complete):

That's using an iPad Pro on the right side.  I understand that Garmin is coming out with a small G3X Touch to compete with the GRT Mini EFIS I have for backup right now.  If it's priced around the same and has competitive features then I'll likely switch to that for the plug and play advantage.
